Ingredients
- 1 medium size eggplant, cut in slices
- 1 chopped onion
- 1 chopped green pepper
- 1 chopped tomato
- 1/2 tsp. salt
- 1/2 c. whole wheat bread crumbs
Directions

1Cook eggplant about 20 minutes in boiling water.

2Rinse in cold water and cube.

3Simmer onion, green pepper and tomato in a little oleo or butter.

4Season with salt.

5Add mixture to eggplant.

6Put in casserole.

7Sprinkle with bread crumbs.

8Bake at 350° for 25 minutes.

9Serves 3 to 4.
