Eggplant Casserole

  • 1 large eggplant
  • 1 green bell pepper
  • 3 small onions
  • 3 small tomatoes
  • 4 Tbsp. oleo
  • 1 Tbsp. sugar
  • 1/2 c. breadcrumbs
  • salt and pepper (season to taste)
  • grated cheese (as much as you want)

Directions

    Peel and slice eggplant in thin slices.

    Soak in salt water. Slice onions, tomatoes and pepper very thin.

    Arrange vegetables in alternate layers in greased casserole, seasoning each layer. Add melted oleo; cover and bake at 350° until done.

    Last 10 minutes of baking, cover with grated cheese and breadcrumbs.
