- 2 c. cooked eggplant, drained
- 1 chopped medium onion
- 1 (No. 2) can drained tomatoes
- 4 eggs
- 1 c. buttered bread crumbs
- 2 Tbsp. butter
- 1 1/2 c. grated cheese
Directions

1Saute onion in butter.

2Mash eggplant and tomatoes, then add onion and eggs.

3Stir until it looks like scrambled eggs.

4Stir in cheese.

5Add 3/4 cup of bread crumbs.

6Pour into baking dish.

7Add rest of bread crumbs on top.

8Bake at 350° for 20 to 25 minutes.
