Ingredients
- 2 medium eggplants
- 1 can cream of mushroom soup
- 1 egg
- 1 medium onion
- 1 1/2 lb. hamburger
- 1 small pkg. Pepperidge Farm stuffing mix (herb or cornbread)
- 8 oz. grated Cheddar cheese
Directions

1Peel and dice eggplant.

2Cook until tender.

3Set aside.

4Cook hamburger and onion.

5Drain grease.

6In a large bowl mix stuffing mix, egg and mushroom soup.

7Then add hamburger and eggplant.

8Use enough of the egg plant water to mix well.

9Place half of mixture in a 9 x 13-inch pan.

10Put half of cheese over mixture.

11Layer remaining mixture; top with cheese.

12Bake at 350° for 30 to 40 minutes.
