  • 4 egggs, beaten
  • 1.5 cups sugar
  • 1 tbsp flour
  • 1 tbsp cornmeal
  • 1/4 cup milk
  • 1/4 cup lemon juice
  • 2 tbsp lemon zest
  • 4 tbsp butter, melted
  • 1 9-inch pie crust

Directions

    Preheat oven to 350 degrees.

    Combine sugar, flour and cornmeal. Stir into beaten eggs. Stir milk, lemon juice, zest, and melted butter into egg mixture.

    Pour into crust.

    Place pie on bottom shelf of oven with foil covering shelf above and bake for 1 hour, or until set.
