Ingredients
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped
- 1/4 bell pepper, chopped
- 2 Tbsp butter or shortening
- 2 med eggplants
- 1 can diced tomatoes
- 6 - 8 crackers (either Ritz or saltines), crumbled
- 1 egg
- 1/4 cup butter, softened
Directions

1Melt 2 Tbsp butter or shortening in skillet.

2Add onions, celery and bell pepper.

3Saute until slightly browned.

4Set aside.

5Boil eggplant until tender.

6Peel and mash.

7Add tomatoes and 3 - 4 crackers and egg.

8Mix together.

9Add onion mix and stir well. Pour into casserole dish.

10Mix 3 - 4 crackers with butter and spread on top.

11Bake at 350° until golden.
