Eggplant Casserole Dish

Ingredients

  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/4 bell pepper, chopped
  • 2 Tbsp butter or shortening
  • 2 med eggplants
  • 1 can diced tomatoes
  • 6 - 8 crackers (either Ritz or saltines), crumbled
  • 1 egg
  • 1/4 cup butter, softened

Directions

    Melt 2 Tbsp butter or shortening in skillet.

    Add onions, celery and bell pepper.

    Saute until slightly browned.

    Set aside.

    Boil eggplant until tender.

    Peel and mash.

    Add tomatoes and 3 - 4 crackers and egg.

    Mix together.

    Add onion mix and stir well. Pour into casserole dish.

    Mix 3 - 4 crackers with butter and spread on top.

    Bake at 350° until golden.
