  • 2 Tbsp. butter
  • 1 medium onion, chopped
  • 2 eggs, beaten
  • 1/2 c. milk
  • 1 c. dry bread or cracker crumbs
  • 1/2 c. buttered bread crumbs or cracker crumbs
  • 1/2 c. grated Cheddar cheese

Directions

    Pare eggplant and cut into 1-inch cubes.

    Cook in boiling, salted water until just tender.
