- 1 medium onion, chopped
- 2 eggs, beaten
- 1/2 c. milk
- 1 c. dry bread or cracker crumbs
- 1/2 c. buttered bread crumbs or cracker crumbs
- 1/2 c. grated Cheddar cheese
Directions

1Pare eggplant and cut into 1-inch cubes.
