- 1 lg. eggplant
- 1/2 c. olive oil
- Med. onion minced
- 1 green pepper, chopped
- 2 cloves garlic crushed
- 1/2 tsp. salt
- 2 Tbsp. white vinegar
- 1 Tbsp. lemon juice
Directions

1Bake eggplant for 1 hour at 400 degrees.

2Peel and chop. Saute other ingredients in a large skillet.

3Add to the eggplant and simmer in a skillet about 15 minutes until mixture is thick. Chill.

4Serve with crackers or pita chips.
