  • 1 to 2 lb. eggplant
  • 1 c. onion
  • 1 c. scallions
  • 2 garlic cloves, minced
  • 1 c. green pepper, chopped
  • 1 c. tomato, diced
  • 1/4 c. olive oil
  • 2 tsp. sugar
  • 2 tsp. lemon juice

    Place eggplant on sheet of aluminum foil and bake 1 hour.

    Let cool.

    Remove pulp.
