- 1 1/2 lb. eggplant, diced
- 2 1/2 c. sliced onion
- 1 c. diced celery
- garlic
- 2 c. tomato sauce
- 1/4 c. wine vinegar
- 2 Tbsp. sugar
- 2 Tbsp. capers
- 12 sliced ripe olives (black)
Directions

1Saute the eggplant in 1/2 cup olive oil; add the sliced onion, celery and garlic, then add the tomato sauce and simmer 15 minutes.

2Then add the rest of the ingredients.

3Cool to mellow flavors.

4This freezes well and is great on sandwiches or as a side condiment.
