  • 1 1/2 lb. eggplant, diced
  • 2 1/2 c. sliced onion
  • 1 c. diced celery
  • garlic
  • 2 c. tomato sauce
  • 1/4 c. wine vinegar
  • 2 Tbsp. sugar
  • 2 Tbsp. capers
  • 12 sliced ripe olives (black)

Directions

    Saute the eggplant in 1/2 cup olive oil; add the sliced onion, celery and garlic, then add the tomato sauce and simmer 15 minutes.

    Then add the rest of the ingredients.

    Cool to mellow flavors.

    This freezes well and is great on sandwiches or as a side condiment.
