Ingredients
- 1 large eggplant
- 1 onion, sliced
- 1 bell pepper, sliced
- 3 ribs celery, chopped
- 1 (16 oz.) can tomatoes
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/8 tsp. red pepper
- 3 Tbsp. olive oil
- 2 Tbsp. vinegar
- 2/3 c. grated cheese
Directions

1Rinse eggplant.

2Peel and slice almost all the way through (accordion style).

3Place eggplant in a 2-quart saucepan.

4Place onion and bell pepper slices between eggplant slices.

5Combine celery, tomatoes, salt, peppers, oil and vinegar; pour over eggplant.

6Cook, covered, over medium heat until eggplant is tender (about 20 minutes).

7Place in serving dish; sprinkle with cheese.

8Makes 6 to 8 servings.
