Ingredients

  • 1 large eggplant
  • 1/2 stick oleo
  • 2 eggs, beaten
  • 1 tsp. Worcestershire sauce
  • salt and pepper to taste
  • 3/4 c. milk
  • 14 saltines, crumbled
  • 1/4 c. onions, chopped
  • 1 c. grated cheese
  • dash of Tabasco sauce

Directions

    Peel and boil eggplant until done.

    Drain and mash with potato masher.
  3. 3
    Stir in oleo while hot. Season. Stir in eggs, milk, crackers and onions.

    Pour into casserole and top with cheese. Bake at 350° for 40 minutes.
