- 1 large eggplant
- 1/2 stick oleo
- 2 eggs, beaten
- 1 tsp. Worcestershire sauce
- salt and pepper to taste
- 3/4 c. milk
- 14 saltines, crumbled
- 1/4 c. onions, chopped
- 1 c. grated cheese
- dash of Tabasco sauce
Directions

1Peel and boil eggplant until done.

2Drain and mash with potato masher.

3Stir in oleo while hot. Season. Stir in eggs, milk, crackers and onions.

4Pour into casserole and top with cheese. Bake at 350° for 40 minutes.
