- 2 medium eggplants
- 3 cloves garlic
- 1 1/2 Tbsp. oil
- 1 tsp. pepper
- 2 medium onions
- juice of 1 lemon
- 1/2 tsp. salt
- 1/2 c. chopped parsley
Directions

1Bake whole eggplants in 350° oven for 1 hour.

2Cool.

3Cut in halves.

4Scoop out pulp; set aside.

5Put onion and garlic in bowl or food processor and mince.

6Add eggplant and remaining ingredients.

7Chill.

8Serve on crackers or as a dip.
