- 1 1/2 to 2 c. cooked rice
- 2 or 3 eggplants, peeled and sliced
- 1 bell pepper, chopped
- 1 onion (medium size), chopped
- 2 leaves celery, chopped
- 1 lb. ground meat
- 1 clove garlic, chopped
- salt and pepper to suit taste
- 1 or 2 Tbsp. cooking oil
Directions

1Cook eggplant in medium size boiler with water until tender; drain.

2Save water.

3Brown meat in cooking oil.

4Add all other ingredients; cook until tender.

5Add eggplant.

6If too dry, add water from eggplant.

7Cook all until of a casserole consistency.
