- corn bread
- 1 eggplant
- 1 lb. lean ground meat
- 1 onion
- 1 bell pepper
- salt and pepper
- milk
- 1/4 stick margarine
Directions

1Peel and cook eggplant until tender and mash.

2Cook meat, onion and bell pepper until done.

3Mix meat mixture, eggplant, margarine, corn bread and enough milk to make real moist.

4Salt and pepper to taste.

5Put in casserole and bake at 375° until brown, about 25 to 30 minutes.
