- 1 medium eggplant, diced
- 1 medium onion, chopped
- 1 small green pepper
- 10 oz. raw, ground turkey
- 2 Tbsp. oil
- 1/2 tsp. salt
- 4 oz. raw rice
- 1 c. hot water
- red pepper
- garlic powder
Directions

1Brown onion and green pepper in oil until soft.

2Add turkey and cook.

3Add a cup of hot water and rice.

4Put eggplant in casserole sliced in cubes.

5Put mixture over eggplant.

6Cover and cook at 350° for 25 to 30 minutes.
