- 4 tablespoons butter
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 lb beef
- 1 eggplant, peeled and cubed
- 12 cup water
- 1 teaspoon salt
- 1 teaspoon fresh ground black pepper
- 12 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 2 cups cooked rice
- 1 egg
- 1 cup breadcrumbs
Directions

1In a large skillet, melt the butter and saute the onion and green pepper over medium heat; add the ground beef and brown slightly.

2Add the eggplant, water, salt, pepper, cayenne, and garlic powder; stir in rice and egg, then pour into a greased 9 x 11-inch baking dish.

3Top with breadcrumbs and bake 30 minutes at 350 degrees F.
