  • 4 tablespoons butter
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 lb beef
  • 1 eggplant, peeled and cubed
  • 12 cup water
  • 1 teaspoon salt
  • 1 teaspoon fresh ground black pepper
  • 12 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 2 cups cooked rice
  • 1 egg
  • 1 cup breadcrumbs

Directions

    In a large skillet, melt the butter and saute the onion and green pepper over medium heat; add the ground beef and brown slightly.

    Add the eggplant, water, salt, pepper, cayenne, and garlic powder; stir in rice and egg, then pour into a greased 9 x 11-inch baking dish.

    Top with breadcrumbs and bake 30 minutes at 350 degrees F.
