- 1 medium eggplant
- salad oil
- 1/4 c. minced green onion
- 1 c. all-purpose flour
- 1/3 c. milk
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1/4 tsp. oregano
- 2 eggs
Directions

1Peel eggplant. Cut into 1-inch chunks.

2In skillet over medium heat, in 1/4 cup hot salad oil, cook eggplant and green onion until eggplant is very tender, 20 to 30 minutes, stirring frequently and adding more oil if needed.

3Mash eggplant.

4Mix flour, milk, baking powder, salt, oregano and eggs. Stir in eggplant.

5Drop batter by scant 1/4 cupfuls in hot oil, turning once. Remove and drain on paper towels.
