- 1 large eggplant
- slices of Mozzarella cheese
- 12 oz. tomato paste
- 2 Tbsp. olive oil
- 1 tsp. salt
- 1 tsp. brown sugar
- 1 tsp. oregano
- 1 tsp. basil
- dash of garlic powder
Directions

1Mix the tomato paste with an equal amount of water.

2Add herbs, salt and sugar; simmer on low heat to a boil.

3Cut the eggplant in one-inch slices, lengthwise.

4Pour oil in casserole and alternate layers of eggplant slices with cheese, finishing with the cheese.

5Pour the tomato sauce over it and bake in preheated oven at 375° for 35 to 40 minutes.
