- 1 large eggplant, cut into 1/2 inch slices
- 2 cloves garlic
- 2 tsp. grated onions
- 1 Tbsp. olive oil
Directions

1Steam the eggplant for about 8 minutes or just until it begins to soften.

2While the eggplant steams, push the garlic through a garlic press, into a small bowl.

3Stir in the onions and oil until well mixed.

4Arrange the eggplant slices in one layer or on baking sheet coated with no-stick spray.

5Brush with half of the garlic mixture.

6Broil about 5 inches from the heat for about 5 minutes or until the slices begin to turn golden.

7Turn, brush with the remaining oil mixture and broil until golden brown.

8Serve hot. Makes 8 servings.
