- 1 medium eggplant
- bread crumbs
- egg (as needed)
- tomato sauce (16 oz.)
- boiled lasagne noodles
- Mozzarella cheese
Directions

1Peel and slice eggplant thin.

2Dip eggplant into beaten egg, then bread crumbs.

3Pan-fry.

4Drain eggplant on paper towels. Layer as follows:

5tomato sauce, lasagne, tomato sauce, eggplant and sauce. Repeat until eggplant and lasagne are finished.

6Top with Mozzarella cheese. Bake at 350° for 30 minutes. Serve with salad and Italian bread.
