Eggplant Lasagne

  • 1 medium eggplant
  • bread crumbs
  • egg (as needed)
  • tomato sauce (16 oz.)
  • boiled lasagne noodles
  • Mozzarella cheese

Directions

    Peel and slice eggplant thin.

    Dip eggplant into beaten egg, then bread crumbs.

    Pan-fry.

    Drain eggplant on paper towels. Layer as follows:

    tomato sauce, lasagne, tomato sauce, eggplant and sauce. Repeat until eggplant and lasagne are finished.

    Top with Mozzarella cheese. Bake at 350° for 30 minutes. Serve with salad and Italian bread.
