Ingredients
- 1 small eggplant, cubed
- 1 (1 lb.) can tomatoes, drained
- 1 green pepper, chopped
- 1 medium onion, sliced thin
- 1/2 lb. Cheddar cheese, shredded
- 1 Tbsp. sugar
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. garlic salt
Directions

1Mix together sugar, salt, pepper and garlic salt.

2Set aside. Place a layer of eggplant in a greased casserole.

3Add a layer of tomatoes and some chopped green pepper and onion.

4Sprinkle lightly with the mixed seasonings.

5Add a layer of cheese.

6Repeat layers until casserole is filled, ending with cheese.

7There is great shrinkage, so force the cover down over the mixture.

8Cover and bake in a preheated 400° oven for 20 minutes.

9Remove cover. Reduce heat to 350° and continue baking for another 30 minutes. Serves 6.
