Eggplant Mozzarella

Ingredients

  • 1/2 c chopped green onions
  • 1/2 c sliced mushrooms
  • 1/4 c water
  • 2 c spaghetti sauce
  • 1/2 tsp salt
  • 1 small eggplant, peeled and sliced
  • 1 egg white, slightly beaten
  • 1 T water
  • 1/2 c all-purpose flour
  • 1 tsp olive oil
  • 1 c lowfat cottage cheese
  • 1 c shredded Mozzarella Cheese

Directions

    Preheat oven to 350°. In a large saucepan over low heat cook green onions and mushrooms in 1/4 cup water until tender. Add spaghetti sauce; bring to a boil.

    Reduce heat; simmer 20 to 25 minutes.

    Sprinkle salt over sliced eggplant; set aside to cool about 10 minutes.
