- 1/2 c chopped green onions
- 1/2 c sliced mushrooms
- 1/4 c water
- 2 c spaghetti sauce
- 1/2 tsp salt
- 1 small eggplant, peeled and sliced
- 1 egg white, slightly beaten
- 1 T water
- 1/2 c all-purpose flour
- 1 tsp olive oil
- 1 c lowfat cottage cheese
- 1 c shredded Mozzarella Cheese
Directions

1Preheat oven to 350°. In a large saucepan over low heat cook green onions and mushrooms in 1/4 cup water until tender. Add spaghetti sauce; bring to a boil.

2Reduce heat; simmer 20 to 25 minutes.

3Sprinkle salt over sliced eggplant; set aside to cool about 10 minutes.
