  • 1 medium eggplant
  • 10 whole crackers, crumbled
  • 1 large egg
  • 1/2 tsp. pepper
  • 1/4 c. Bisquick mix

Directions

    Peel eggplant and cover with water; boil until tender.

    Drain and cool.

    Add egg and pepper and mix well.

    Add Bisquick mix. Drop mixture into deep hot fat (oil) until brown.
