Eggplant Parmesan

- 1 large eggplant
- 3 eggs
- 1 c. dry bread crumbs
- 3/4 c. olive oil
- 1/2 c. grated Parmesan cheese
- 2 tsp. oregano
- 1/2 lb. sliced Mozzarella cheese
- 3 (8 oz.) cans tomato sauce
Directions

1Start oven at 350°.

2Grease a 2-quart casserole.

3Wash eggplant, pare and cut in thick slices.

4Dip each slice into beaten eggs, and then into crumbs.

5Saute in hot oil in skillet until golden on both sides.

6(Eggplant will be soft.)
