- 2 eggplant
- 1 c. self-rising flour
- salt to taste
- 4 eggs
- Ragu spaghetti sauce
- 1/2 c. Parmesan cheese
Directions

1Peel and slice eggplant; place in a 2 x 14-inch cooking dish and salt to taste.

2Let set for 30 minutes.

3Dip eggplant into flour and put in egg mixture; fry until brown, then place back into cooking dish in layers.

4Sprinkle each layer with Parmesan cheese and cover with spaghetti sauce.

5Bake at 300° for 10 to 15 minutes until hot.
