- 1 large eggplant
- 1/2 c. oil
- 2 tsp. oregano
- 2 tsp. salt
- 1/2 lb. sliced Mozzarella or Swiss cheese
- 1 (15 oz.) can tomato puree
- 1/2 c. water
- 1/2 c. grated Parmesan
Directions

1Peel and cut eggplant into 1/4-inch slices.

2Brown in oil and drain.

3Layer eggplant, 1/2 of the oregano, 1/2 of the salt, 1/2 of the Mozzarella, 1/2 of the tomato puree, 1/4 cup water and 1/4 cup Parmesan cheese. Repeat layers.

4Bake at 350° for 30 minutes. Makes 6 to 8 servings.
