  • 3 medium eggplant, peeled and sliced
  • 1/2 c. flour
  • 1 pt. spaghetti sauce
  • 1 c. cooking oil
  • 1/2 lb. Mozzarella cheese, grated
  • 1/2 c. grated Parmesan cheese

Directions

    Soak eggplant in salt water 1 hour.

    Rinse.

    Beat egg and milk together and pour over eggplant and let stand a few minutes. Drain.

    Coat with flour and fry until brown in hot oil.

    Drain.
