- 3 medium eggplant, peeled and sliced
- 1/2 c. flour
- 1 pt. spaghetti sauce
- 1 c. cooking oil
- 1/2 lb. Mozzarella cheese, grated
- 1/2 c. grated Parmesan cheese
Directions

1Soak eggplant in salt water 1 hour.

2Rinse.

3Beat egg and milk together and pour over eggplant and let stand a few minutes. Drain.

4Coat with flour and fry until brown in hot oil.
