Eggplant Parmesan

Ingredients
- 1 bag rice (boil-in-bag)
- 1 eggplant, sliced
- 1 medium onion, chopped
- 2 tsp. parsley flakes
- 1 bell pepper, chopped
- 4 oz. mushrooms
- 2 tsp. oregano
- tomato sauce
- 1 c. grated Parmesan
- 2 c. Mozzarella cheese
Directions

1Mix onion, garlic, parsley, bell pepper, mushrooms and oregano.

2Add rice; pour into a baking pan.

3Put sliced eggplant on top of rice mixture.

4Pour tomato sauce and Mozzarella cheese on top of eggplant.

5Bake at 350° for 30 to 45 minutes.

6Sprinkle with Parmesan cheese when done.
