- 1 c. chopped onion
- 1 clove garlic
- 1 (6 oz.) can tomato paste
- 2 tsp. oregano
- 2 medium egg plants, peeled and sliced
- oil
- 1 large can tomatoes
- 1 c. bread crumbs
- 1 lb. Mozzarella cheese
- 1/2 c. Parmesan cheese
- 2 eggs, beaten
Directions

1Saute onion and garlic in small amount of oil until golden brown.

2Stir in tomatoes and paste; simmer 30 minutes, stirring often.

3Stir in oregano and simmer 30 minutes more.

4Mix eggs and salt.

5Dip eggplant in eggs; then in bread crumbs.

6Fry in oil; drain on paper towels.

7Mix cheeses together.

8Pour 1 cup mixture in 13 x 9-inch baking dish.

9Top with 1/3 eggplant and 1/3 cheeses.

10Repeat until used up.

11Bake in a 350° oven for 45 minutes.
