- 1 lb. ground beef
- 1 or 2 medium eggplants, cut in 1/2-inch pieces
- 1 lb. grated Mozzarella cheese
- 1 lb. jar spaghetti sauce (Prego or Ragu)
Directions

1Brown ground beef and drain.

2Mix sauces and beef.

3Cook eggplant until tender.

4Drain well.

5In a 2 1/2 or 3-quart casserole dish, layer beef, eggplant and cheese until the last layer is cheese.

6Heat until cheese is melted and hot.
