- 1 medium size eggplant
- 2 eggs
- 1 pkg. Mozzarella cheese
- cracker meal or bread crumbs
- 1 c. vegetable oil
- plain or meat sauce
Directions

1Pare and slice eggplant 1/2-inch thick.

2Dip each slice in well beaten eggs. Coat with very fine cracker meal or bread crumbs.

3Place oil in frying pan to moderate heat.

4Place eggplant slices, brown on both sides.

5In baking dish, place eggplant. Cover with Mozzarella cheese and cover with sauce.

6Bake at 350° to 375° for about 30 minutes.
