- 1 large eggplant
- 1 egg, beaten with milk
- bread crumbs
- garlic powder
- cooking oil
- 2 c. tomato sauce
- 2 Tbsp. parsley
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 1/2 c. Parmesan cheese
- 1/2 lb. Mozzarella cheese
- salt (optional)
Directions

1Peel eggplant and slice.

2Dip slices in egg and milk mixture, then into bread crumbs.

3Cover bottom of frying pan with cooking oil and fry eggplant.

4Sprinkle each slice with small amount of garlic powder while frying.

5Add more oil as necessary.
