- 2 medium eggplant, sliced 1/4-inch round
- egg
- bread crumbs, seasoned with garlic and Italian seasonings to taste
- 16 oz. Ricotta cheese
- 1 egg
- 8 oz. Mozzarella cheese
- 1/4 c. grated Parmesan cheese
- garlic powder to taste
- salt and pepper
- 1/4 c. spaghetti sauce
Directions

1Dip eggplant into egg, then into seasoned bread crumbs.

2Fry eggplant on both sides.

3Place on paper towels to dry off excess oil.

4Coat bottom of a large casserole dish with sauce.

5Place eggplant on top.

6Add filling.

7Place eggplant on top. Coat with sauce. Bake at 350° for 1/2 hour.
