  • 2 medium eggplant, sliced 1/4-inch round
  • egg
  • bread crumbs, seasoned with garlic and Italian seasonings to taste
  • 16 oz. Ricotta cheese
  • 1 egg
  • 8 oz. Mozzarella cheese
  • 1/4 c. grated Parmesan cheese
  • garlic powder to taste
  • salt and pepper
  • 1/4 c. spaghetti sauce

Directions

    Dip eggplant into egg, then into seasoned bread crumbs.

    Fry eggplant on both sides.

    Place on paper towels to dry off excess oil.

    Coat bottom of a large casserole dish with sauce.

    Place eggplant on top.

    Add filling.

    Place eggplant on top. Coat with sauce. Bake at 350° for 1/2 hour.
