  • 2 Tbsp. flour
  • 1 c. Mozzarella cheese
  • 2 Tbsp. Parmesan cheese
  • salt and pepper
  • 1 egg
  • 2 Tbsp. milk
  • 1/2 tsp. Italian seasoning
  • marinara sauce

Directions

    Peel and cut eggplant in 1/2-inch slices; flour (use Ziploc bag).

    Combine egg and milk.
