  • 3/4 c. tomato sauce
  • 1 small onion, peeled and sliced
  • 1 small bell pepper, seeded and sliced
  • 4 oz. can mushrooms, drained
  • garlic salt and pepper to taste
  • pinch of basil and oregano
  • 3 oz. shredded Mozzarella cheese (part skim)
  • 1 Tbsp. grated Parmesan cheese

    Bake eggplant slices in single layer on a nonstick baking sheet, uncovered, 15 to 20 minutes at 400° until soft.
