- 1 eggplant, peeled and sliced 1/3-inch thick
- 2 eggs, mixed with 1/4 c. milk
- Italian bread crumbs
- olive oil
- plain flour
- 1 c. Parmesan cheese
- 1 lb. shredded Mozzarella cheese
Directions

1Put flour in bag; shake a few pieces of eggplant at a time in flour, then dip in egg mixture, then bread crumbs.

2Fry in olive oil until golden brown; drain on paper towels.

3While frying eggplant, make sauce.
