  • 1 eggplant, peeled and sliced 1/3-inch thick
  • 2 eggs, mixed with 1/4 c. milk
  • Italian bread crumbs
  • olive oil
  • plain flour
  • 1 c. Parmesan cheese
  • 1 lb. shredded Mozzarella cheese

Directions

    Put flour in bag; shake a few pieces of eggplant at a time in flour, then dip in egg mixture, then bread crumbs.

    Fry in olive oil until golden brown; drain on paper towels.

    While frying eggplant, make sauce.
