- 1 medium eggplant
- 1 1/4 c. shredded cheese (sharp)
- 2 Tbsp. parsley
- 1/8 tsp. pepper
- 2 Tbsp. cooking oil
- 2 slightly beaten eggs
- 1 1/4 c. Ritz cracker crumbs (20)
- 1 clove garlic
- 1/2 tsp. salt
- 2 Tbsp. minced onions
Directions

1In covered saucepan, cook eggplant in boiling water until tender, about 5 minutes.

2Drain well and mash.

3Stir in crumbs, cheese, onion, parsley, garlic, salt and pepper.

4Shape into patties.

5Cook in hot oil for 5 minutes on each side.
