Ingredients

  • 2 c. shredded Mozzarella cheese
  • 1/4 c. chopped green pepper
  • 1/4 c. chopped onion
  • 1 c. spaghetti sauce with mushrooms
  • 1/4 tsp. salt
  • 3 c. sliced and quartered eggplant
  • 9-inch unbaked pastry shell
  • 1/4 c. butter

Directions

    Saute peppers and onion in butter until tender.

    Blend in spaghetti sauce and salt.

    Bring to a boil and add eggplant.

    Cook partially covered for 10 minutes or until eggplant is almost tender.

    Pour 1/2 the mixture into the pie shell.

    Top with 1/2 the cheese.

    Add remaining mixture and top with remaining cheese. Bake at 400° for 30 minutes.

    Let stand 15 minutes before serving.
