- 2 c. shredded Mozzarella cheese
- 1/4 c. chopped green pepper
- 1/4 c. chopped onion
- 1 c. spaghetti sauce with mushrooms
- 1/4 tsp. salt
- 3 c. sliced and quartered eggplant
- 9-inch unbaked pastry shell
- 1/4 c. butter
Directions

1Saute peppers and onion in butter until tender.

2Blend in spaghetti sauce and salt.

3Bring to a boil and add eggplant.

4Cook partially covered for 10 minutes or until eggplant is almost tender.

5Pour 1/2 the mixture into the pie shell.

6Top with 1/2 the cheese.

7Add remaining mixture and top with remaining cheese. Bake at 400° for 30 minutes.

8Let stand 15 minutes before serving.
