  • 1 whole Large Eggplant, Cut Into 12 Equally Thick Round Slices
  • 1 Tablespoon Extra Olive Oil
  • 1 cup Tomato Sauce
  • 12 slices Mozzarella (thin Round Slices, About The Size Of Your Eggplant Rounds)
  • 1 cup Fresh Spinach
  • 1 whole Tomato, Diced
  • 1 Tablespoon Grated Parmesan

    Preheat the oven to 425 F.

    On a greased rimmed baking sheet, place the eggplant slices and drizzle the top with a bit of olive oil.

    Bake them for about 15 minutes or until tender.

    Remove from the oven and spread tomato sauce over each eggplant slice.

    Then add mozzarella, spinach, diced tomato and Parmesan to the top of each eggplant slice.

    Turn the oven to broil.

    Put the tray of eggplant into the oven again and broil them for about 3-5 minutes or until golden brown and melted.
