  • 1 medium eggplant, peeled
  • 2 re bell peppers, seeded
  • 1 red onion, peeled
  • 2-3 garlic cloves, minced
  • 3 tbsp. olive oil
  • 1.5 tsp of kosher salt
  • 1/2 tsp of pepper
  • 1 tbsp of tomato paste

    preheat over to 400 degrees

    cut eggplant, peppers, and red onion into 1 inch cubes.

    toss them in a large bowl with the garlic, olive oil and salt, pepper.

    roast for 45 min. until lightly brown and soft, tossing once during cooking.

    cool slightly.

    place in food processor and add tomato paste and pulse 3-4 times to blend.
