- 1 medium eggplant, peeled
- 2 re bell peppers, seeded
- 1 red onion, peeled
- 2-3 garlic cloves, minced
- 3 tbsp. olive oil
- 1.5 tsp of kosher salt
- 1/2 tsp of pepper
- 1 tbsp of tomato paste
Directions

1preheat over to 400 degrees

2cut eggplant, peppers, and red onion into 1 inch cubes.

3toss them in a large bowl with the garlic, olive oil and salt, pepper.

4roast for 45 min. until lightly brown and soft, tossing once during cooking.

5cool slightly.

6place in food processor and add tomato paste and pulse 3-4 times to blend.
