Eggplant Roll-Ups

- 2 large eggplants
- 1/4 to 1/2 c. olive oil
- 16 slices boiled ham, sliced thin
- 2 c. Ricotta cheese
- 3 garlic cloves, minced
- 1/2 c. minced fresh parsley
- 3/4 lb. Mozzarella cheese, sliced thin
- 1/2 c. grated Parmesan cheese
Directions

1Preheat oven to 350°.

2Peel eggplants and slice lengthwise into approximately 8 (1/4-inch thick) slices.

3In a large frying pan, heat oil and brown slices on both sides.

4Add more oil as needed. To make eggplant rolls, fold slices of ham in half lengthwise and place one on each slice of browned eggplant.

5In small bowl, mix Ricotta, garlic and parsley.

6Spoon the cheese mixture on top of ham; spread evenly to the edges.

7Top with slice of Mozzarella. Roll eggplant and place, seam side down, in baking dish.

8Makes approximately 16 rolls.

9Spoon tomato sauce over rolls and sprinkle with cheese.

10Bake 30 minutes.
