Eggplant Roll-Ups

  • 2 large eggplants
  • 1/4 to 1/2 c. olive oil
  • 16 slices boiled ham, sliced thin
  • 2 c. Ricotta cheese
  • 3 garlic cloves, minced
  • 1/2 c. minced fresh parsley
  • 3/4 lb. Mozzarella cheese, sliced thin
  • 1/2 c. grated Parmesan cheese

Directions

    Preheat oven to 350°.

    Peel eggplants and slice lengthwise into approximately 8 (1/4-inch thick) slices.

    In a large frying pan, heat oil and brown slices on both sides.

    Add more oil as needed. To make eggplant rolls, fold slices of ham in half lengthwise and place one on each slice of browned eggplant.

    In small bowl, mix Ricotta, garlic and parsley.

    Spoon the cheese mixture on top of ham; spread evenly to the edges.

    Top with slice of Mozzarella. Roll eggplant and place, seam side down, in baking dish.

    Makes approximately 16 rolls.

    Spoon tomato sauce over rolls and sprinkle with cheese.

    Bake 30 minutes.
