- 1 large eggplant
- 1 lb. hamburg
- 1 c. bread crumbs
- 1 envelope Lipton onion soup mix
- 1 egg, beaten
- 1/2 c. Cheddar or Mozzarella cheese, shredded
- 1 c. tomato sauce or spaghetti sauce
Directions

1Wash and peel eggplant; slice lengthwise in 1/4-inch slices. Soak for 10 minutes in salted water.

2Pat dry with a paper towel. In a large skillet, greased or sprayed with Pam, braise slices until tender.

3Drain on towels.
