  • 1 eggplant
  • salt
  • bread crumbs
  • 2 eggs
  • pepper
  • chopped parsley
  • 1/2 c. Parmesan cheese

    Peel eggplant.

    Slice eggplant into 1/2-inch thick slices, then salt each slice to get water out and the salt softens the eggplant.

    Let slices stand with salt, while water runs out. While they drain, mix bread crumbs, eggs, Parmesan cheese, salt, pepper and chopped parsley into a paste.

    Dry the slices, then fry in oil until browned.

    Next, put a teaspoon of the stuffing on one slice of eggplant and cover with another.

    Fry these sandwiches. Cover with tomato sauce and bake 15 minutes.
