Ingredients
- 1 large eggplant
- 2 eggs, beaten
- 1/2 c. milk
- 1/2 c. bread crumbs
- 1/2 onion, chopped
- salt and pepper to taste
- 3/4 c. shredded mild cheese
Directions

1Peel and cut eggplant into 1/2-inch cubes.

2Cook in salted water 15 minutes or until tender.

3Drain well.

4Mash eggplant and add remaining ingredients.

5Place in 1 1/2-quart greased casserole.

6Bake at 350° for 30 minutes.

7Serves 5 to 6.

8I add 1/2 cup of cheese on top.
