- 2 c. diced, peeled eggplant
- 1 c. bread crumbs
- 1 c. milk
- 1 1/2 tsp. onion
- 2 Tbsp. butter
- 1 c. grated cheese
- 3 eggs, beaten
- 1 tsp. black pepper
- 1 tsp. salt
Directions

1Soak eggplant in salt water for 1 hour.

2Drain well and cook until done.

3Mash eggplant and add remaining ingredients.

4Pour into buttered casserole and bake for 30 to 45 minutes in a 350° oven.
