Ingredients
- 1 large eggplant
- 2 Tbsp. butter
- 1/2 c. chopped onion
- 1 minced garlic clove
- 1 1/4 c. fine dry bread crumbs
- 3/4 lb. ground beef
- 1 egg, beaten
- 1/4 tsp. salt
- pepper to taste
- 1 Tbsp. oil
- 2 Tbsp. Parmesan cheese
Directions

1Cut eggplant lengthwise; scoop out inside, leaving a 3/4-inch shell.

2Place shells on slightly oiled shallow pan.

3Chop eggplant pulp.

4Cook in butter until clear.

5Add onion and garlic; cool. Add bread crumbs, ground beef and egg; season with salt and pepper.

6Mound eggplant shells with mixture; brush lightly with oil.

7Sprinkle with additional bread crumbs and Parmesan cheese. Bake at 325° for 45 minutes.

8Serve with chili sauce or hot catsup.
