Ingredients

  • 1 large eggplant
  • 2 Tbsp. butter
  • 1/2 c. chopped onion
  • 1 minced garlic clove
  • 1 1/4 c. fine dry bread crumbs
  • 3/4 lb. ground beef
  • 1 egg, beaten
  • 1/4 tsp. salt
  • pepper to taste
  • 1 Tbsp. oil
  • 2 Tbsp. Parmesan cheese

Directions

    Cut eggplant lengthwise; scoop out inside, leaving a 3/4-inch shell.

    Place shells on slightly oiled shallow pan.

    Chop eggplant pulp.

    Cook in butter until clear.

    Add onion and garlic; cool. Add bread crumbs, ground beef and egg; season with salt and pepper.

    Mound eggplant shells with mixture; brush lightly with oil.

    Sprinkle with additional bread crumbs and Parmesan cheese. Bake at 325° for 45 minutes.

    Serve with chili sauce or hot catsup.
