Eggplant Stuffing Bake

Ingredients
- 1 medium eggplant (unpeeled), diced
- 2 Tbsp. oil
- 1 large onion, chopped
- 1 green pepper, chopped
- 1 clove garlic, pressed
- 2 slices whole wheat bread, buttered and cubed
- 3 eggs, beaten
- 1/2 tsp. each: salt, black pepper, dried thyme and marjoram leaves
- 1 c. grated cheese (Parmesan, Monterey Jack or sharp Cheddar)
Directions

1Steam eggplant or boil in salted water for 5 minutes.

2Saute onion and green pepper.

3Add garlic, eggplant, bread cubes, eggs and seasoning.

4Saute for 2 minutes more.

5Spoon into a buttered 1-quart baking dish.

6Cover with grated cheese.

7Bake at 350° for 20 to 25 minutes or until lightly browned.

8Serve hot or at room temperature.
