Eggplant Stuffing Bake

Ingredients

  • 1 medium eggplant (unpeeled), diced
  • 2 Tbsp. oil
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 1 clove garlic, pressed
  • 2 slices whole wheat bread, buttered and cubed
  • 3 eggs, beaten
  • 1/2 tsp. each: salt, black pepper, dried thyme and marjoram leaves
  • 1 c. grated cheese (Parmesan, Monterey Jack or sharp Cheddar)

Directions

    Steam eggplant or boil in salted water for 5 minutes.

    Saute onion and green pepper.

    Add garlic, eggplant, bread cubes, eggs and seasoning.

    Saute for 2 minutes more.

    Spoon into a buttered 1-quart baking dish.

    Cover with grated cheese.

    Bake at 350° for 20 to 25 minutes or until lightly browned.

    Serve hot or at room temperature.
