Ingredients

  • 1 large eggplant
  • 1 1/2 c. water
  • 1/3 c. chopped onion
  • 1/2 c. chopped celery
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1/3 c. chopped green pepper
  • 1/2 c. grated sharp cheese
  • 1/2 c. bread crumbs
  • 1/2 tsp. salt
  • 3 slices bacon, partially cooked (can use pork bacon)

Directions

    Peel and cube eggplant.

    Place in cold water for 10 minutes. Drain and cook with fresh water, onion and celery until tender. Drain.

    Blend soup and milk into eggplant.

    Add pepper, cheese, bread crumbs and salt.

    Pour into greased casserole.

    Top with partially cooked bacon and bake, uncovered, at 350° for 35 minutes.
