- 1/2 c. salad oil
- 1 clove garlic, peeled
- 1/2 c. onion, sliced
- 1/4 c. green pepper, diced
- 1 medium size eggplant
- 2 c. tomatoes
- 1 tsp. salt
Directions

1Peel and dice eggplant.

2Heat oil in heavy frypan and saute garlic 3 minutes.

3Remove garlic.

4Add onion, green pepper and eggplant and cook 3 minutes.

5Add tomatoes and salt.

6Cook slowly over low fire 20 minutes until eggplant is tender.
